Discard Pizza Dough

What to do
Task 1

Gather all ingredients, Setup your stand mixer fitted with a dough hook.

Place warm water in mixer bowl; add yeast and honey. Mix and let stand until creamy
Task 3

Add flour, cornmeal, sourdough discard, oil, and salt to the yeast mixture; beat until combined
Additional flour may be needed. You want your dough sticky and not form a solid ball that pulls away from the walls completely

Prepare a large bowl with a little oil and transfer the dough into the bowl. Cover with a towel and let set for 1 hour
Task 5

The dough will still be a little sticky, Pull out 1 serving of dough mine weighted approx. 320g
place the dough onto a lightly floured surface and pat into a circle, transfer the dough on a piece of parchment paper sprinkled with a little extra corn meal

Top the pizza with sauce and toppings
Task 7

Bake in the preheated 450 oven until golden brown, approx. 18 minutes.
if not golden brown after 18 minutes set the oven to broil and watch until the top is done.
Note
I take 130-gram ball and freeze them. They are perfect for individual pizzas. Thaw then stretch to circle and bake at 450 degrees for 18 minutes
