Discard Pizza Dough

What goes in
  • 2 cup Warm Water
  • 1 Cup Discard or Active Sourdough Starter (make sure to stir down discard before measuring)
  • 2 .25 oz packages Active Dry Yeast
  • 2 tbsp Honey
  • 6 cup Bread Flour
  • 4 tbsp Oil (I use Avocado)
  • 2 tsp Salt
  • 1/2 cup Cornmeal or Uncooked Grits
What to do
    Task 1
  1. Gather all ingredients, Setup your stand mixer fitted with a dough hook. Preheat oven to 450 degrees F
  2. Task 2
  3. Place warm water in mixer bowl; add yeast and honey. Mix and let stand until creamy
  4. Task 3
  5. Add flour, cornmeal, sourdough discard, oil, and salt to the yeast mixture; beat until combined

    Additional flour may be needed.  You want your dough sticky and not form a solid ball that pulls away from the walls completely

  7. Prepare a large bowl with a little oil and transfer the dough into the bowl. Cover with a towel and let set for 1 hour
  8. Task 5
  9. The dough will still be a little sticky, Pull out 1 serving of dough mine weighted approx. 320g

    place the dough onto a lightly floured surface and pat into a circle, transfer the dough on a piece of parchment paper sprinkled with a little extra corn meal

  11. Top the pizza with sauce and toppings

  13. Bake in the preheated oven until golden brown, approx 20 minutes.

    if not golden brown after 20 minutes set the oven to broil and watch until the top is done.
